BACON WRAPPED EVERYTHING Today I will share my bacon wrapped carrots recipe – it was a big hit on Mother’s Day, so I’m glad I filmed it. For 6 servings you will need: 18 carrots and I buy the skinny colorful ones because they look fun and they bake quicker than the regular big carrots 20 slices of thinly sliced bacon Maple syrup Brown Sugar Sea Salt Wash the carrots well, but don’t pill them. After you wash them, clip the tops, but leave some greenery because they will look better when you serve them. Then separate the slices of bacon from one another and it is going to make the wrapping process much faster. As you see now you just grab a strip instead of having to separate them for each carrot. Pour a small amount (about 2 tablespoons) of maple syrup into a small bowl and if you are using a brush with hairs, make sure to pull them a bit to remove any loose ones. Ideally, I would use a rubber brush, but mine has disappeared… Next, place a strip of bacon on the cutting board and spread some maple syrup on it – that will help the bacon stick to the carrot and will make the wrapping much easier. After you wrap the entire carrot, take a knife and tuck the end of the bacon strip underneath. Then grab the carrot with both hands and twisted in the direction in which you wrapped the bacon to tighten it up. Do the same thing with the rest of the carrots and place them in a plate. At this point, preheat the oven to 350 degrees F. Take a large baking tray and place a sheet of parchment paper, then arrange the carrots with each pointing in the opposite direction. Then spread a moderate amount of maple syrup on each carrot – just enough so it doesn’t drip on the paper and if it does – not a biggy. Sprinkle the carrots with sea salt and place the tray one level up from the bottom of the oven and set a timer for 10 minutes. After 10 minutes, take the carrots out and spread some more maple syrup on them. Place them back in the oven and bake for another 15 minutes. After 15 minutes, take the carrots out, spread some more maple syrup and sprinkle them with brown sugar. At this point, turn the oven off, and turn the broiler on. Place the carrots back in the oven and broil them for 5 minutes, but keep and eye on them and make sure the bacon doesn’t get burned.
