today we're making Spanish marinatedcarrots known here in Spain as
zanahorias aliñadas or how they call them inthe beautiful city of Cadiz in Andalucia
zanahorias aliñas guys this is such anincredible tapas dish yes you heard that
correctly a tapas dish who knew that youcould grab carrots and serve them as a
savory appetizer but let me tell youthis is absolutely delicious these
carrots have such a beautiful flavor tothem plus this recipe is very easy to
make and it's also very refreshing perfectsnack for one of those hot summer days
next to a refreshing drink now reallyquick before we get started a quick
couple recommendations since this recipe isso simple uses minimal ingredients very
important to use the best ingredients you canget that way it's full of flavor
like getting the freshest carrots and using thebest seasonings especially a
good-quality Spanish paprika as this iswhat really flavors this dish as always
i'm gonna be using Kiva's sweet smokedSpanish paprika this is one heck of an
amazing paprika you guys always see me using itwhy because it's one of the best ones
in the market and I highly recommend itlink below where you guys can get this alright folks
let's get started we're gonna beginby grabbing 4 fresh carrots and
peeling them the length of these carrotsare 7 inches which is about 13
centimeters and I always like to have apaper towel underneath for an easy
cleanup
once your carrots are peeled add theminto a deep pan and fill it with some
cold water you want it to be about aninch above the carrots generously season
it with sea salt and heat it with ahigh heat while our carrots are cooking
let's get our marinade ready let's grabthree cloves of garlic
and finely mince them
and add the minced garlic into a mortarnext up I'm gonna add half a teaspoon of
sweet smoked Spanish paprika a 1/4 teaspoon of cumin powder a generous
teaspoon of dried oregano 1/2 a teaspoonof sea salt and about 1/8 of a teaspoon
of freshly cracked black pepper thenusing a pestle pound down on the mixture
until you form a paste and everythingcomes together
once everything's well mixed I'm gonnaadd two tablespoons of white wine
vinegar and one tablespoon of extravirgin olive oil and mix it all together until
it's well combined okay guys let's moveback to our carrots we have been boiling
this for about 25 minutes and thesecarrots should have the perfect texture
to them they're not going to be crunchybut you don't want to over boil them
where they´re gonna get mushy and fall apartyou know you can always grab a
toothpick pierce it and if you caneasily remove it these are ready to go
let's go ahead and remove this from the heatand I'm going to drain the water through
a sieve and into a bowl now I'm going tograb half a cup of the water that we
used to boil the carrots and add it intothe mortar with the mixture and once
again gently mix this together that wayeverything's well combined
once the carrots are cool enough tohandle you don't have to let them
completely cool I'm going to startcutting them I like to cut off both ends
and then cut it into rounds that are about a1/4 inch thick which is 1 centimeter
and as you're cutting your carrotsadd them into a bowl
once you have all your carrots cut and in the bowllet's grab our marinade and
pour it all over the carrots and using aspoon we're going to gently mix this
together that way everything's perfectlycombined
for the last step we're going to coverthis with some saran wrap and add it
into the fridge for at least two hoursbut it's recommended 12 to 24 hours that
way all these beautiful flavors canmarinate together
okay guys after marinating our carrots in thefridge for a couple hours this should be
ready to go I´m gonna transfer this into aserving dish and let you know how it taste
I cannot wait to try these marinated carrots
seriously look how beautifulthese look let's try it guys here we go
so good all those flavors all thoseseasonings that paprika really
shines through the garlic wow it's anamazing combination of flavors but most
importantly is the texture of thecarrots they are perfectly boiled you
know you don't want to obviously be rawor crunchy but you don't want to over
boil them where there mushy and they fall apartyou want them to have texture but still when you put
them in your mouth they meltbetween 20 to 25 minutes should be the
perfect amount to boil again you canalways test them with a toothpick if it
easily goes in they are ready to goserve this cold serve this at room
