In this video I want to to show you
How to cook "Carrot Rice with Chicken"
Ingredients:
1 lb boneless chicken breast
2 cups rice
2 big carrots, shredded
1 big onion, sliced
1 small onion, shreded
2 tbsp brewed saffron
1 tbsp sugar
Salt, pepper and cinnamon powder to taste
Silver almond, pistachio and barberries for garnishing
At first place chicken breast in a medium pot
Add onion, salt and pepper, cinnamon stick
Pour some oil and 1 cup water
And place it on medium-low heat
Cover and cook for about 1 hour
Now as you can see after 1 hour
Chicken breast is cooked and ready
Let them cook down and cut it into small pieces
Pour some oil in a pan
Set the heat on medium
And add in shreded onions
Saute until golden brown
Then add shredded carrots
Add chicken
Spices
Mix very well
Sprinkle sugar
And you can pour some fresh lemon juice
Pour brewed saffron
Add 1/2 cup chicken gravy and let the mixture cook on low heat for 10 minute
Meanwhile, in another pot bring 8 cups of water to boil
Drain and add rice to the boiling water
You have to drain rice when it's soft outside and hard in the center
Do not over cook it
When you take out one grain out of boiling water
It must be tender
After draining rice, wash your pot
Place it on heat, add some oil and your favorite tah-dig
Then pour one layer rice and one layer carrot and chicken mixture
Repeat until you finish rice
Then cover with a kitchen paper towel, place the lid on
First place the pot on high heat for 5 minutes, after you saw the steam coming
Out of the pot, lower the heat
And cook for 40 minutes
Carrot-rice is ready to serve
