The simplest recipe to make a healthy hearty soup just like that with just two simple ingredients that is carrot and tomatoes. Ingredients to make healthy tomato and carrot soup:- (serve 4) 4 tomatoes 3 carrot Black or pink salt to taste Black pepper to taste Water as required ( you can add more seasonal vegetables of your choice to this soup like beetroot, beans etc) Method to make carrot and tomato soup:- Wash the carrots nicely remove the bottom and the top Roughly chop the tomatoes and Carrots (no need to peel the carrots) Add the chopped vegetables to the pressure cooker, add 1/2 cup water & salt to taste..place the lid on the cooker Put the cooker on flames & cook for 3 whistles, than switch off the flames Let it cook slightly...using a hand blender...blend the cooked tomatoes and carrots Strain the blended mixture with a strainer Remove the pulp ( use the pulp in Dal tadka, gravy or in any dough) Heat the soup again ( Adjust consistency by adding more water if required as per taste ) Serve warm ...sprinkle some black pepper on top.
